The Rules:
1.)
Always begin with clean barware. It is completely unacceptable to start the cocktail by picking off a dried piece of pasta that the dishwasher left on the glass. Before your guests arrive, inspect your glasses and rewash any that look unappealing. All of your bar hardware, without exception, should be cleaned after each use.
2.)
Make sure you have enough ice. If the cocktail you are preparing is supposed to be chilled, make sure you serve it cold. The most common mistake an amateur will make is to skimp on the ice. And since they take quite a bit longer than a professional bartender to prepare the drink, the ice they do use is half melted by the time they serve the drink. This produces a warm, watered down beverage your guests are bound to hate. Big ice cubes made in an ice try work best for cocktails.

Use the right equipment. There are some basic tools of the trade that you should invest in if you are serious about becoming a "mixologist." In no particular order, they are:
Shaker, Mixing Glass, Strainer, Bar Spoon, Measure ("Jigger"), Ice Bucket, Ice Scoop or Tongs,Variety of Cocktail Glasses,Bar Knife and Cutting Board, Citrus Zester
There are other tools you can also invest in, such as a blender, but the list above is a good, low maintenance foundation for any aspiring bartender.


Garnishing Cocktails

: " The appeal of a cocktail is not only one properly made, but also in its presentation. A garnish can be as simple as the swizzle stick in which to stir your cocktail, whipped cream and fruit, to flaming your drink and adding sparkles of zest. Different drinks call for different garnishes.
Twist or Wedge? The most common garnish is a wedge of lime, but it is usually mistakenly called a twist of lime. An actual twist is the rind of the citrus fruit only. If just a twist is ordered, it generally means a lemon twist. The proper way to serve this is to run the rind side around the rim of the glass, where the flavorful oils are most prevalent, then twisted over the drink and dropped in. A wedge or wheel is cut so it sits on the side of the glass or is skewered with other garnishes. "
